The Level 2 Production Chef Apprenticeship prepares you for a rewarding career in the fast-paced and challenging world of catering. As a Production Chef, you will have the opportunity to work in a wide range of settings, including schools, hospitals, care homes, the Armed Forces, and high street or pub kitchens.

This apprenticeship will develop your ability to work methodically and efficiently while demonstrating strong organisational skills, energy, and attention to detail. You will also gain an understanding of the importance of sustainability and environmental responsibility in catering, ensuring you are ready to meet the demands of the modern industry.

Training will equip you to maintain excellent standards of food and kitchen hygiene, comply with procedures, recipes, and menu specifications, and adapt dishes to meet dietary, religious, and allergenic requirements. You will also learn to use specialist kitchen equipment, building the technical confidence to thrive in professional kitchens.
• Techniques for the preparation, assembly, cooking, regeneration and presentation of food.
• Use kitchen tools and equipment correctly to produce consistently high-quality dishes according to specifications.
• Take responsibility for the cleanliness, organisation and smooth running of the work area.
• Learn about key nutrient groups, their function and main food sources.
• How to communicate with colleagues, line managers and customers effectively.
• Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
• Work to ensure customer expectations are met.
• How technology can support food production organisations.
The apprenticeship is delivered through a blend of on-the-job training in your workplace and off-the-job learning at college. In your role, you will gain practical experience preparing and producing dishes while building organisational and technical skills. At college, you will train in our on-site catering facilities, which replicate the environment of a professional kitchen and allow you to develop your skills safely and confidently.

Learning is supported by access to our modern, recently redeveloped campus, where workshops, tutorials, and practical sessions are led by industry-expert trainers. Regular mentoring and progress reviews ensure your learning is applied effectively in real settings.
You should be aiming for at least 3 GCSEs at Grade 4 or above including English Language and/or mathematics.

These requirements may alter dependent upon the needs of the employer. If you don’t quite achieve the entry criteria though don’t worry, we can discuss your options.

If you have not achieved a Grade 4 in English Language and/or mathematics you will be required to achieve a Level 1 or Level 2 Functional Skills in English and/or Maths as part of your Apprenticeship.
Practical workplace observations to assess your cooking and organisational skills

Written assignments and knowledge tests to demonstrate understanding

Portfolio completion to record your achievements and progression

Regular progress meetings and reviews with your employer and Trainer Assessor

End Point Assessment (EPA) – externally validated, including a professional discussion, knowledge test, and practical skills assessment
Industry expert Assessors provide continuous support, ensuring you gain confidence and competence throughout the programme.

We work with a wide range of excellent employers, including Crow Wood and Burnley Football Club, giving you opportunities to learn in real industry settings.

The programme has been co-created with employers, making it highly relevant and reflective of the latest practices and standards in professional catering.

Completing the Level 2 Production Chef Apprenticeship will prepare you for a variety of exciting roles in the hospitality and catering sector. Immediate opportunities include positions such as Commis Chef, Station Chef, or Barista, where you will build your skills and gain experience in professional kitchens or front-of-house environments.

With experience, you could progress into more senior roles such as Head Chef, Restaurant Manager, or Front of House Supervisor, taking on responsibility for managing teams, creating menus, and delivering high-quality customer experiences. This apprenticeship also provides an excellent foundation for further study or higher-level hospitality training.
As a Production Chef apprentice, you will benefit from training in our fully equipped on-site catering facilities, designed to replicate the environment of a professional kitchen. These facilities allow you to practise and refine your skills in food preparation, cooking, and service, using the same tools, equipment, and processes found in the industry.

You will also study at our modern, recently redeveloped campus, which provides interactive classrooms, specialist learning spaces, and access to the Learning Resource Centre with hospitality-specific texts, journals, and online resources. This combination ensures you are fully prepared for the demands of working in professional catering.
